Try this scrumptious dairy free “Chook Bucket” Pesto

I really want to share this with you, because it tickled me, and I hope it will tickle you too.
Mary B. was helping out at an Oils Club, and she created a very curious, very extraordinary pesto for attendees to try.
Now I’m creative with food. I love adding our Young Living oils to dips and drinks and sauces and smoothies to create the most extraordinary flavours. Just watching the “WOW!” expression on someone’s face as they try it and their tastebuds start dancing….well, that’s such a great feeling.
But I have NEVER thought of anything like this….and that’s why I want to share it with you. Just imagine a dip containing such exotics as nettles, dandelion leaf, chickweed and carrot tops.
Kylie Bryant gave it the perfect name….”Chook Bucket Pesto”. Now you get the chance to surprise your guests with this recipe, and see the looks on their faces.
I haven’t had a chance to make it myself, but it’s definitely on my bucket list. And if you live in the UK/EU, you’ll use your plus range of oils in the recipe, and in the US you’ll use your vitality range of oils. It’s the same essential oil in the bottle, it just has different labelling according to how we can promote its use in different countries. Enjoy!!!!
Mary’s Chook Bucket Pesto (Dairy Free)
Mary writes: I made this pesto for one of our monthly oils clubs, but it was our beautiful Kylie Bryant who named it Chook Bucket Pesto, and the name stuck. So in honour of Kylie, here goes… And because I usually “wing” this recipe, just know that with the greens it’s about trial and error. Here are some of the combinations of greens that I’ve used in this pesto. Just use a couple of cups of greens in the recipe below, and away you go!
- Chickweed and parsley,
- Basil and English spinach
- Sorrel, dandelion leaves and parsley
- Coriander and mint
- Nettles and English spinach
- Dill and sorrel
- Carrot tops and dock

Ingredients
- 2 cups of greens from the list above
- 2 tbsp toasted pepitas and sunflower seeds (cooled), or raw cashews if preferred
- Garlic to taste
- A couple of strips of lemon rind
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- ½ cup extra virgin olive oil (EVOO)
- 8 – 10 drops Lemon oil
- 2 – 3 drops Black Pepper oil
- Sea salt and cracked pepper (I use tricolour)
Method
Combine seeds or nuts, garlic and lemon rind in a processor till it reaches a crumbly texture.
Add your greens, lemon juice and nutritional yeast, then process again.
Finally add your olive oil and essential oils, and process once again.
Taste your amazing concoction, then add salt and pepper to season, and taste again.
Oat and Pepita Herb Crackers
Ingredients
- ½ cup rolled oats
- ½ cup pepitas
- Approx. 1 tbsp of fresh herbs like Rosemary, Thyme, Oregano, Tarragon, Oregano, Marjoram or a combination of these
- 1 tsp baking powder
- Pinch of salt
- ¼ cup water
Method
- Grind the ingredients above to a flour consistency (with the exception of the water)
- Add ¼ cup water slowly till mixture comes together into a dough consistency
- Add 3 or 4 drops of Young Living essential oil to match the herbs used in the crackers (ie. Rosemary, Thyme, etc.)
- Roll the dough between 2 sheets of parchment paper until it’s 2 or 3mm thin. Cut into desired shape.
- Place the dough on a parchment lined baking tray and bake at 190°C (375°Fahrenheit) for 20 mins or until golden.
- If you like to give your crackers a cheesy flavour, add a tablespoon of nutritional yeast to the recipe.
And remember to add Love into the recipe as you’re making it! That’s always my secret ingredient.
